I just had a delicious dinner with The Hubby, made by yours truly.
Something simple. Baked chicken (w/ bread crumbs & parmesan) and a plethora of steamed veggies: beets, potato, sweet potato, yam, and broccoli.
Yes, we're trying to eat healthier again and I'm hoping this will last a little longer than last time!!
Tomorrow, we'll have the same thing for dinner. We have some chicken breasts leftover and I can easily steam more veggies again. My goal this week is to use up all of our veggies. I'm so tired of throwing rotten food out!
For our lunch tomorrow, I made us gourmet sandwiches and I have to say, they look absolutely delicious!
THE HUBBY'S sandwich: crusted french bread, non-fat mayo & mustard, black forest ham, roasted chicken deli meat, lettuce or 'greens', light cheddar cheese.
MY sandwich: crusted french bread, pesto sauce, fresh roma tomatoes, fresh basil, bocconcini, sundried tomato.
I'm not sure if my sandwich is that healthy. The pesto sauce and sundried tomatoes have lots of olive oil but I didn't use that much: 1 tbsp of pesto and 1 slice of sundried tomato.
Yum.
